Halloween Spooky Spider Cupcake

Ingredients

2 1/2 cups flour
2 cups sugar
1/2 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup vegan sour cream
1 cup margarine, softened
1/2 cup chocolate soy milk
3/4 cup prune baby food
2 teaspoons pure vanilla extract

Filling Ingredients

2 cups vegan chocolate chips
1 cup vegan powdered sugar
1 cup vegan marshmallows
1 bag of vegan cinnamon candy (for eyes)
1 bag of vegan licorice laces (for legs)
vegan chocolate sprinkles (for fur)
vegan red food dye

Directions

Preheat oven to 350F.
Line cupcake tins with black cupcake liners.
In large mixing bowl, sift dry ingredients.
In small mixing bowl, mix wet ingredients.
Pour wet ingredients into the dry ingredients bowl and mix.
Fill cupcake liners 1/2 to 2/3 full.
Bake 20+ minutes or until toothpick comes out clean.
Let cool 20 minutes.
Melt marshmallows, add food dye and mix.
Cut small hole in the top of each cupcake and add melted red marshmallows.
Frost cupcakes with dark chocolate icing (Melt 2 cups chocolate chips and 1 cup powdered sugar.) and add sprinkles to make them furry.
Use 2 cinnamon candies for eyes.
Cut licorice laces for legs – 4 short laces for each side. Too cute to eat!
