French Mint Vegan Cupcake Recipe

French Mint Cupcake


1 1/2 cup flour
3/4 cup cocoa
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup softened vegan margarine (80% fat is best)
1/4 cup oil
1/4 cup vegan chocolate yogurt
1/3 cup applesauce
1/3 cup vegan sour cream
2/3 cup chocolate soy or almond milk
1 teaspoon peppermint extract
nuts (any kind) to sprinkle on top


Mix wet ingredients in one bowl and dry ingredients in another then mix all together until smooth. Fill cup-cake liners 3/4 full.
Sprinkle with nuts.
