Cheesecake Cupcake


2 packages (8 oz each) vegan cream cheese
1 cup organic unbleached sugar
1 teaspoon baking powder
1 tablespoon vanilla
1/4 cup non-dairy yogurt
1/3 cup applesauce
12-24 graham crackers, crushed


Leave vegan cream cheese out to soften.
Mix wet ingredients in a bowl. Sift sugar and baking powder in another bowl then mix into wet ingredient bowl. Add crushed graham crackers to the bottom of cupcake liners then fill with batter.
Bake at 350F for 30-35 minutes, or until crust is golden brown and toothpick comes out clean.
